Grade 5 Students Learn and Dine on Tour of CIA!

As part of KCSD’s summer programming, 20 incoming Grade 5 students savored a special field trip to the Culinary Institute of America (CIA) campus in Hyde Park. The trip was organized by the Coalition for Healthy School Food, with support from the Cornell Cooperative Extension of Ulster County.
First, the students explored the beautiful campus and walked to “The Egg," the CIA student common area and dining facility.
Students then met Chef Paul DelleRose and Chef David McCue, whose student chefs-in-training were assigned to design and prepare a plant-based, healthy lunch that could be served in schools. Students happily served as taste-testers for this feast of mixed green salad, water chestnut croquette over red lentil stew, and the exciting grand finale — a black bean brownie!
Students were then invited to judge the meal and cast their votes for the top dish. Unsurprisingly, the brownie took the top prize! What an amazing treat this was for the students and potential future top chefs!
